2 packs southwest egglife® wraps
16 oz ground turkey
1 packet taco seasoning
1 can black beans
1 cup shredded cheese
½ cup pico de gallo
1 avocado, sliced
½ cup sour cream
1 lime, sliced
1 tbsp cilantro
Preheat oven to 425°F.
In a skillet, cook ground turkey with taco seasoning.
Lay 10 egglife wraps on a sheet pan, letting them hang over the edge. Make sure the entire bottom surface of the pan is covered.
Layer ground turkey, black beans, shredded cheese and pico de gallo on top of the wraps.
Place 2 egglife wraps on top of the filling, in the center of the pan, and fold the overhanging wraps back towards the center until the filling is covered. Spray top of quesadilla with avocado oil and place an empty sheet pan on top. Bake at 425°F for 20 minutes, or until golden brown.
Cut the sheet pan quesadilla into cross sections.
Top with avocado,sour cream, a squeeze of lime and cilantro!
