Sesame Peanut Noodle

Ingredients

1 pack egglife original POWER PASTA 

1 tbsp sesame oil

¼ cup red pepper, sliced

¼ cup yellow pepper, sliced

½ cup purple cabbage

⅓ cup water

1 tbsp butter

½ cucumber, cut in 1-2" pieces

½ cup peanuts, roughly chopped

Garnish with green onions, cilantro, sesame seeds and lime.

Peanut Sauce:

1 cup peanut butter

⅓ cup low sodium soy sauce

2 tsp sesame oil

1 tsp sriracha

2 tbsp rice vinegar

2 tsp ginger, grated

1 tbsp fresh lime juice

Steps

Peanut Sauce Directions:

Add all sauce ingredients in a mixing bowl. Whisk thoroughly until mixed. Set aside

Directions:

STEP 1

In a skillet over medium-heat, add sesame oil and saute peppers and cabbage for 2-3 minutes.

STEP 2

Add water, butter and POWER PASTA to the skillet. Cover and heat for 3 minutes, stirring occasionally.

STEP 3

Add cucumber, peanuts and peanut sauce to the pan. Stir until mixed.

STEP 4

Top with green onions, cilantro, sesame seeds & lime. Serve and enjoy!
