Ingredients

  • 1 pack egglife original POWER PASTA
  • 3 small beets, cooked
  • 1 small beet, uncooked
  • 2 cloves garlic
  • 4 oz goat cheese
  • ¼ cup cottage cheese
  • 2 tbsp olive oil
  • Zest and juice from 1 lemon
  • Salt & pepper
  • Arugula for garnish

Steps

  1. Blend the following until smooth: cooked and raw beets, garlic, 3 oz. goat cheese, cottage cheese, olive oil, lemon zest, lemon juice. Add salt and pepper to taste.
  2. In a pan over medium-low heat, add pink sauce and stir until warm.
  3. Add egglife POWER PASTA to the pink sauce and stir to coat, adding 1 tablespoon of water if needed to thin sauce. Continue to stir pasta in sauce until warm, approximately 2 minutes.
  4. Season with salt, pepper, or lemon to taste.
  5. Garnish with arugula and remaining 1oz. goat cheese. Enjoy!
