Blend the following until smooth: cooked and raw beets, garlic, 3 oz. goat cheese, cottage cheese, olive oil, lemon zest, lemon juice. Add salt and pepper to taste.
In a pan over medium-low heat, add pink sauce and stir until warm.
Add egglife POWER PASTA to the pink sauce and stir to coat, adding 1 tablespoon of water if needed to thin sauce. Continue to stir pasta in sauce until warm, approximately 2 minutes.
Season with salt, pepper, or lemon to taste.
Garnish with arugula and remaining 1oz. goat cheese. Enjoy!
