Creamy Golden POWER PASTA

Ingredients

  • 1 pack egglife original POWER PASTA
  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 2 garlic cloves, minced
  • ¼ teaspoon crushed red pepper
  • 1.5 pounds Sun Gold or other small yellow or orange tomatoes
  • ½ teaspoon Kosher salt
  • ½ cup water
  • ¾ cup full-fat cottage cheese

Steps

  • In a large pot over medium heat, add olive oil, onions, garlic, and red pepper and cook until softened and lightly golden, about 5 minutes.
  • Add the tomatoes to pan and cook, stirring often, until the skins blister and the tomatoes release their juices, about 5-8 minutes.
  • Reduce the heat to a light simmer, add water and kosher salt, then cover and cook for about 10 minutes to lightly thicken.
  • Add tomato mix and cottage cheese to a blender and purée until smooth.
  • In a pan over medium-low heat, add golden sauce and stir until warm
  • Add egglife POWER PASTA to the golden sauce and stir to coat, adding 1 tablespoon of water if needed to thin sauce. Continue to stir pasta in sauce until warm, approximately 2 minutes.
  • Garnish with olive oil, grated parmesan, and freshly minced chives as desired. Enjoy!
