In a large pot over medium heat, add olive oil, onions, garlic, and red pepper and cook until softened, about 5 minutes.
Add tomatoes to pan, stirring often, until the skins blister and the tomatoes release their juices, about 5-8 minutes.
Reduce the heat to a light simmer, add water and kosher salt, then cover and cook for about 10 minutes to lightly thicken.
Add tomato mixture and cottage cheese to a blender and purée until smooth.
In a pan over medium-low heat, add golden sauce and stir until warm
Add egglife POWER PASTA to the golden sauce and stir to coat, adding 1 tablespoon of water if needed to thin sauce. Continue to stir pasta in sauce until warm, approximately 2 minutes.
Garnish with olive oil, grated parmesan, and freshly minced chives as desired. Enjoy!
