Ingredients
1 pack egglife original POWER PASTA
⅓ cup water
1 tbsp butter
1 cup low fat cottage cheese
1 can fire roasted tomatoes
½ cup roasted red bell peppers
fresh basil
mini meatballs, cooked
red pepper flakes

STEP 1
In a blender, add cottage cheese, fire roasted tomatoes, roasted red peppers and basil. Blend until smooth. If the sauce is too thick, add 2 tbsp water until you reach the desired consistency.
STEP 2
In a skillet over medium-heat, add water, butter and POWER PASTA. Cover and heat for 3 minutes, stirring occasionally.
STEP 3
In a bowl or meal prep containers, add POWER PASTA, sauce and cooked mini meatballs. Garnish with basil and red pepper flakes.
