Ingredients

1 pack egglife sundried tomato POWER PASTA

¼ cup water

1 tbsp olive oil

1 carrot, cut into matchsticks

1 medium zucchini, cut into slices

1 medium yellow squash, cut into slices

6 tbsp unsalted butter

¾ cup Parmesan cheese, grated 

½ cup whole milk

½ cup cherry tomatoes, halved

Steps

STEP 1

Heat 1 tbsp olive oil in skillet on medium-heat and add carrots, zucchini and yellow squash. Cook for about 7 minutes, until softened. Remove from pan.

STEP 2

In the same skillet, melt the butter. Whisk in the Parmesan and milk until smooth. Stir in the cherry tomatoes, and veggies. Add egglife POWER PASTA and cook until warmed through.

STEP 3

Top with fresh basil and enjoy!
