Hidden Veggie Pasta

Ingredients

1 pack egglife roasted garlic POWER PASTA

2 heirloom tomatoes

1 large zucchini

3 large carrots

1 full garlic clove, halved

1 medium onion

1 red pepper

olive oil

salt & pepper

⅓ cup water

1 tbsp butter

fresh basil

burrata 

red pepper flakes

Steps

STEP 1

Preheat the oven to 400°F. Line a baking sheet with parchment paper. Cut veggies into large pieces and place on the baking sheet. Drizzle with olive oil and season with salt and pepper.

STEP 2

Roast veggies for 25 minutes. Remove from the oven and place into a blender. Blend until smooth. If sauce is too thick, gradually add water to the blender until it reaches the desired consistency.

STEP 3

In a skillet over medium-heat, add cup water, butter and POWER PASTA. Cover and heat for 3 minutes, stirring occasionally. 

STEP 4

Add sauce to POWER PASTA and stir until coated. Serve with fresh basil, burrata, red pepper flakes and enjoy!
