Creamy Roasted Red Pepper Pasta

Ingredients

1 package egglife® original POWER PASTA

1 cup roasted red pepper

⅓ cup cottage cheese

⅓ cup hummus of choice

½ tsp garlic powder

½ tsp onion powder

¼ tsp paprika

salt and black pepper, to taste

optional: few tbsp shredded Italian blend cheese

Steps

STEP 1

Cook the POWER PASTA according to package instructions, then drain and set aside.

STEP 2

Add the roasted red pepper, cottage cheese, hummus, garlic powder, onion powder, paprika, sea salt, and black pepper to a blender. Blend on high until completely smooth and creamy.

STEP 3

Pour the sauce into a pan and warm over low heat for 2–3 minutes, stirring often. Stir in cheese if adding.

STEP 4

Toss in the cooked pasta until evenly coated. Taste and adjust seasoning as desired!
