Buffalo Chicken Pasta

Ingredients

1 pack egglife original POWER PASTA

⅓ cup water

1 tbsp butter

Buffalo Cheese Sauce:

1 cup cottage cheese at room temperature

⅓ cup buffalo sauce

3 tbsp water

3 tbsp butter

3 tbsp gluten free flour

2 cups milk at room temperature

½ tsp onion powder

½ tsp garlic powder

salt & black pepper to taste

1 cup sharp cheddar cheese, shredded

½ cup Monterey Jack cheese, shredded

2 cups cooked chicken breast, diced

Optional: ranch dressing and green onion to garnish

Steps

STEP 1

In a small blender or food processor, add the cottage cheese, buffalo sauce and 3 tbsp of the water. Blend until smooth. Set aside.

STEP 2

In a skillet over medium heat, add 3 tbsp butter. Once melted, add in the flour and whisk for 1 minute. Slowly pour in the milk and continue whisking until it starts to simmer.

STEP 3

Reduce heat to low and add onion powder, garlic powder, salt and pepper. Add shredded cheese and whisk until melted.

STEP 4

Pour in the buffalo cottage cheese mixture and add the chicken. 

STEP 5

In a separate skillet over medium-heat, add ⅓ cup water, 1 tbsp butter and egglife POWER PASTA. Cover and heat for 2 minutes, stirring occasionally. Add pasta to buffalo cheese mixture and stir until coated. Serve with a drizzle of ranch and chopped green onions & enjoy!
