[.feature]4[.feature] oz fresh mozzarella, sliced (look for “Ovaline” size) or shredded mozzerella
[.feature]1[.feature] oz sliced pepperoni (~16 small rounds, or 4 per panini)
plum tomatoes, sliced
[.feature]4[.feature] tsp fresh basil, chiffonade
cooking spray
To assemble wrap, spread 1 teaspoon of tomato paste on lower half of each wrap.
Begin layering with arugula, 1 oz fresh mozzarella, 4 slices of pepperoni, a few tomato slices and the basil.
Roll the wrap to prepare for the panini press.
Spray the outside of the wrap lightly with cooking spray.
Place in the panini press, wrap side down, and warm it until cheese is melted. Alternatively, you can heat it in a non-stick skillet until the cheese is melted.
