2 packs of sweet cinnamon egglife® wraps

1 ½ cups mascarpone cheese 

2 tbsp keto-friendly sweetener 

2 eggs 

3 tbsp 35% heavy cream

½ tsp ground cinnamon 

½ tsp vanilla extract 

4 tbsp butter, divided 

12 strawberries, sliced 

¼ cup keto-friendly sugar free syrup

Directions

STEP 1

In small bowl, combine mascarpone and sweetener; set aside.

STEP 2

In shallow bowl, whisk together eggs, cream, cinnamon and vanilla.

STEP 3

Melt 1 tbsp butter in skillet set over medium heat. One at a time, dip sweet cinnamon egglife into egg mixture to coat evenly; fry for 1 to 2 minutes per side or until golden brown, adding more butter to pan as necessary.

STEP 4

Spread each wrap with 2 tbsp mascarpone mixture. Arrange 1 sliced strawberry over one-half of wrap, then fold wrap in half to enclose filling. Repeat with remaining wraps, mascarpone mixture and strawberries.

STEP 5

Arrange two filled wraps on each plate; drizzle with sugar-free syrup before serving. Enjoy!

TIPS: 

  • Substitute a dairy-free alternative for mascarpone cheese if desired. 
  • Substitute raspberries, blackberries or cherries for the strawberries.
