Spinach Artichoke Panini
Gluten free living never tasted like this! Make the artichoke cream ahead for this delicious spinach artichoke panini.

4 Italian-style egglife® wraps

1 cup fresh spinach

1 cup shredded mozzarella cheese

Sliced plum tomatoes

Cooking spray

Artichoke Cream

½ cup canned artichokes (about ½ a can)

2 oz cream cheese

2 tbsp sour cream


Step 1

To make artichoke cream, place all ingredients in a small food processor.

Step 2

Process until smooth, scraping down sides if necessary.

Step 3

To assemble each wrap, start with ¼ cup spinach, top with several tablespoons of the artichoke cream, then add ¼ cup mozzarella cheese and several thin slices of tomato, then roll wrap.

Step 4

Spray outside of the wrap lightly with cooking spray. 

Step 5

Place in panini press, wrap side down, and warm it until cheese is melted.  Alternatively, heat in non-stick skillet until cheese is melted.
