Traditional hummus is a no-no on some legume-free diets, but this keto-friendly zucchini hummus veggie wrap version uses zucchini instead of garbanzo beans. So eat to your heart’s content.

4 original egglife® wraps

1-2 carrots, cut into matchsticks

1 large bell pepper, cut into matchsticks

1-2 cucumbers, cut into matchsticks

alfalfa sprouts washed well

baby spinach

Zucchini Hummus

1 ½ cups chopped raw zucchini

1 small clove garlic

2 tsp. tahini (sesame seed butter)

2 tbsp lemon juice

2 tbsp olive oil

½ tsp sea salt

Directions

STEP 1

To make hummus, put all ingredients in a food processor fitted with the “S” blade.  Process until smooth and creamy, pausing to scrape down sides with a spatula as necessary.

STEP 2

To make wrap, line half of an egglife wrap with the hummus.  Top with veggies. Roll and enjoy!
