Directions
Step 1
Whisk eggs in a small bowl and set aside.
Step 2
Heat a non-stick skillet over medium-high heat. Add sausage and cook about 5 minutes or until cooked through. Remove sausage and drain.
Step 3
Add butter and sauté kale and peppers for 1 minute until kale is slightly wilted.
Step 4
Add eggs to skillet and gently stir to scramble. When eggs are cooked, turn off heat and add cheese. Stir to incorporate eggs into mixture. Add salt and pepper.
Step 5
Add about 1/6th of the mixture to southwest egglife wrap and roll. Spray lightly with cooking spray and grill wrap in panini maker for 3-4 minutes or warm in non-stick skillet.
Step 6
Serve with hot sauce if desired. Can be made one day ahead and heated in microwave!
