4 italian egglife® wraps

deli turkey

sliced plum tomatoes

fresh mixed greens

add any of the following to taste: avocado, sliced almonds, pesto, fresh basil, vinegar & oil, mango

optional:  homemade pistachio pesto

1 cup packed basil leaves

½ cup packed spinach leaves

¼ cup pistachios

1 tbsp lemon juice

2 tbsp olive oil

¼ tsp sea salt

fresh ground pepper

Directions

STEP 1

To make the basic wrap, start with the italian wrap.  Top with turkey, fresh greens and sliced tomato.  For a fresh twist, add avocado, sliced almonds, pesto, fresh basil, and/or oil and vinegar.  To give it a California vibe – try adding mango!

STEP 2

If you want to do more – try this homemade pistachio pesto: Put all ingredients in a mini-prep food processor and mix until smooth, but still a bit chunky.  You will need to scrape down the sides with a spatula a few times.
